Celiac disease is an autoimmune disorder where the ingestion of gluten leads to damage in the small intestine. Gluten is a protein found in wheat, barley, and rye. In those with celiac disease, gluten triggers an immune response that attacks and damages the villi in the small intestine. The villi are finger-like protrusions that normally allow the body to absorb nutrients from food. When the villi become damaged, nutrients cannot be properly absorbed into the bloodstream. Over time, this can lead to nutritional deficiencies and other health issues.
